Amazing Women A rising chef at the Greenbrier is becoming well-known around the country

At the Greenbrier, women are making historical contributions.

Darby Blount, the resort’s chef de cuisine, is delighting guests’ taste buds in the main dining room.

She was recently named to ClubandResortChef.com’s 40 Under 40 list for 2025.

Blount told 59News that she is relatively new to cooking compared to others in similar roles. She did not start cooking until she got to college, where she studied psychology. She started cooking for herself because she was living off campus. Blount quickly fell in love with cooking.

“It is like a dream to have your hobbies become your job. As the saying goes, “If you find something you love, you never have to work a day in your life.”

It is incredible to see how my childhood interests – reading, writing, and drawing various forms of art – have evolved. I never thought food would be one of my favorite mediums of art, but now it is literally art on a plate,” Blount said.

Blount decided to leave college and participate in the Greenbrier’s apprenticeship program, where she honed her cooking skills. She pushed herself, working 14- to 18-hour days to advance faster.

Blount is now in charge of both the main dining room’s dinner operations and room service. She creates menus and oversees a twelve-person culinary team.
